Justification for the introduction of the programme
The main reason for the introduction of the programme lies in the ever-increasing demands and broader tasks that baristas in the hospitality industry face when it comes to preparing hot drinks in a coffee bar. The fact that the coffee bar is the most widespread form of catering business and is experiencing the greatest change in consumer habits after the emerging crisis. Through newly acquired practical knowledge, skills and competences, baristas should transfer the outdated form of the business towards new trends and adapt the conceptual and personalised offer of the coffee bar.
The purpose of introducing the programme reflects the hospitality sector’s need for a growing number of staff with specialised knowledge in the field of preparing and serving coffee and other beverages, as well as monitoring trends in the bar business. The sector’s need for staff to ensure quality and excellence of service, as well as the need for the profession to constantly evolve to create complete guest satisfaction, is increasing. In addition, the proposed programme aims to professionalise the profession of barista in a coffee bar, since according to the research carried out, the level of expertise of the staff (completed vocational school, barista course…) is only 9%.

- Participate in purchasing and stocking coffee and other beverages in the coffee bar
- Prepare and serve coffee, hot drinks and coffee-based bar mixes
- Apply the rules of communication with guests and employees
- Participate in compiling the means for offering and selling drinks in the coffee bar (bar menu and drinks price list)
- Apply the rules for maintaining hygiene of the workplace, premises, equipment and supplies in the catering industry
- Apply measures and working procedures in a safe manner
- Apply the basic expressions of a foreign language in the profession

Justification for the introduction of the programme
The rationale for the introduction of the programme stems from the great interest and need of the modern hospitality industry for training through practical knowledge, skills and competences of bartenders in cocktail bars. The economic development strategy of the Republic of Croatia predicts further growth of the tourism and hospitality sector and underlines the need for high quality and well-trained staff in a cocktail bar. There is an increasing need for well-trained and professional staff with knowledge in the field of cocktail bar work in tourism and hospitality organisations, which have outlined in their strategic tourism documents that they aim to provide a high level of service.
The aim of the programme is to train professionals in cocktail bar work procedures, knowledge and preparation of high quality bar mixes. In order to properly understand the work in a cocktail bar, the programme necessarily includes a set of basics about the types of bars, their offers, the way of preparing bar mixes, techniques and skills of working at the bar counter, communication processes and etiquette, hygiene, safety at work and a foreign language with specialised terminology. The concept of the programme aims to acquire the basic knowledge and skills of bartenders through the presentation of modern offers in the bar. Through the implementation of the programme, participants are introduced to the theoretical and practical knowledge of numerous disciplines, encouraging and developing creative thinking, as well as learning through working on individual and team tasks in the field of bar business.
