The course objective

  • Developing basic linguistic and cultural competences for the purposes of communicating in gastronomy.
  • Developing linguistic skills (reading comprehension, speaking and writing skills) at a basic level, adapted for the gastronomy industry.

  • present (through a PPT presentation) historical outlines of French gastronomy
  • present (through a PPT presentation) Croatian gastronomic profile
  • make attendants familiar with the most popular regional gastronomic heritage
  • simulate a guiding tour both within the field and onsite classes
  • final exam (written and oral)

Introductory information about the course (objectives, methods, and schedule of activities)
Facts about Croatian gastronomy profile
Historical overview of French cuisine
Day 2 4 hoursPreparing participants for an individual course assignment – presentation of the project assignment
Historical and social background influencing Croatian cuisine: Kvarner region – the city of Rijeka
Day 3 7 hoursA guiding tour – Rijeka

Presenting open market (diary, meat and fish pavilion)
Visiting fish restaurant (lunch break): Mediterranean cuisine from Croatian perspective
Students simulate a guiding tour supported by a professional guide
Day 4 3 hoursMediterranean perspective of gastronomy: research results made by participants
Final exam
Day 5 12 hoursField trip (wine tasting in Poreč and Motovun)
